Beer Can Chicken Big Green Egg
Chicken on the Big Green Egg is one of the best things ever. So many times when you cook chicken, it can get really dry which is not pleasant. But on the Big Green Egg, it stays moist and juicy for all to enjoy. Also, the smoke adds so much flavour, it is like a dish you would get at a BBQ joint who does it for a living.

There are so many variations you can make. Different types of beer, different spices (I like curry flavours) and different types of wood.

I did up a beer can chicken on the Big Green Egg today and wanted to share the recipe. Nothing like celebrating the first day of parental leave with a juicy chicken, slow cooked to perfection.

The recipe and cooking details
What you need
- 1 chicken cleaned out. Can be anywhere from 10-15lbs. Cook a little longer the bigger the bird of course.
- Your choice of rub. Today I used brown sugar, salt, onion salt and pepper.
- Half a can of beer with a few garlic cloves tossed in. Drink the other half of course. Today I am using a pale ale.
- 4 pieces of bacon added to the top of the bird once it is sitting on the can.
- Aluminum tray or plate setter which is what I will use on the Big Green Eggs. You don’t want anything dripping in the charcoal.
- Big Green Egg primed to sit at 375 F.
- Cooking time 1.5-2 hours.
Smoking Chicken Wings On Big Green Egg
It has been awhile since I shared some of my Big Green Egg cooking with you. I recently got my Egg back and have cooked a few tasty meals on it. One of my favourite things to smoke are chicken wings. I used to put wings in the category of food I would rather order out, but since getting the Egg, wings at home are great.
Meatloaf On The Big Green Egg

Summer is here, and that means grilling or smoking fine meats and veggies. Common choices are chicken, burgers, ribs, and hot dogs. But what about a classic cold-weather dish on the Big Green Egg?
I am talking about meatloaf. A simple but tasty dish that everyone loves.
For most, meatloaf is one of those winter meals that falls under the category of comfort food. Well, we all can use some comfort in the summer as well, right? Cold beer, good friends, and a giant helping of smoked meatloaf that just melts in your mouth.
What I like most about making meatloaf, whether it is for the oven or smoker, is that it is easy to make, and once it is cooking, there is nothing else to do.
Blackened Burgers On The Big Green Egg
With the long weekend starting in several hours, I wanted to share one more Big Green Egg recipe with you that my family loved.
Last weekend, I tried out Bobby Flay’s recipe for blackened burgers with pepper jack and remoulade.
Burgers are always a hit in our house and this recipe added in one of my favourite flavours – heat.
The blackened aspect of the burger is explained in Bobby’s cook book, Bobby’s Flay’s Barbecue Addiction, as doing it Louisiana style in a cast iron grill on high heat.
Good thing I have a cast iron grill because it worked like a charm.
Basically you make up a dry rub and put it one on side of the burger. Put it in the pan on very high heat and sear the meat so it has that black and charred crust that adds so much flavour.
Former Iron Chef Winner Likes My Cooking

The timing could not have been better. It was just the other day that we watched the finale of season 9 of Food Network Star, which ended up being won by Damaris Phillips.
One of the other contestants, who was an early favourite to win, was Viet Pham.
His claim to fame besides his restaurant in Utah (Forage), is that he beat Bobby Fley on Iron Chef America. That is a huge accomplishment to put on the resume.
So, the guy knows food.

Trip # 7 – Pulled pork with wood’s sauce
The latest adventure was a special one. My father in law (who loves to cook and eat) was visiting from Toronto and he could not wait to experience the Big Green Egg.
Probably the hardest part of the whole thing was picking what to make. We decided on pulled pork.
Grilled Pizza On The Big Green Egg
When grilling, smoking or barbecuing on the Big Green Egg, meat is usually the way to go. Tasty dishes like beer can chicken, chicken thighs, ribs and steak are all great choices. But what about other options to feed a hungry crowd?
How about grilled pizza? Yes please.
This past weekend we had some friends over and I wanted to try out the new pizza stone I got for my birthday. So, the wife and I teamed up to make homemade grilled pizza on the Big Green Egg.
The plan was my wife would take care of the pizza dough and the homemade sauce and I would take care of the grilling. I was pretty excited as the one fun part of grilling pizza on the Egg is that you get to ramp the heat up to over 600 F. This helps to replicate what a brick oven would do and make it feel like you were eating at a fancy pizza joint.
Now this was the first time for us making homemade pizza dough and cooking pizza like this. So, we were hoping that it would all turn out.
Recipe: Smoked Ham On The Big Green Egg

During my time using my Big Green Egg, I have done mostly chicken and beef. They are a lot quicker than pulled pork or even ribs. So unless you are having guests over, you don’t try something that takes all day. Well, we had some friends over for dinner, and as we were planning the menu weeks ago, I wanted to try something new, but still something that had little chance of failure.
The worst thing you can do when expecting guests for dinner is to do something new that may not turn out. Then you are stuck serving food that you are not proud of, or you just give up and order pizza. I know the classics, such as beer can chicken or chicken thighs, would have been a hit, but it would have been pretty boring for me.
The answer turned out to be smoking a 10 lb. ham. Based on how much we all enjoyed it, I was glad I decided to ham it up.
